Ingredients

Yield: 12 slices

1 tsp baking soda
2 eggs
213 g (1½ cup) flour
227 g (3 banana, 1 cup) mashed ripe bananas
½ tsp salt
113 g (½ cup) sour cream
212 g (1 cup) sugar
1 tsp vanilla extract
½ cup vegetable oil (or ½ cup butter)

Preparation

Step 1

Preheat the oven to 350 degrees F.

Step 2

Grease and flour 1 9x5-inch loaf pan. Set aside.

Step 3

In a large bowl, whisk together 212 g (1 cup) sugar and ½ cup vegetable oil (or ½ cup butter). Add 2 eggs, 227 g (3 banana, 1 cup) mashed ripe bananas, 113 g (½ cup) sour cream and 1 tsp vanilla extract; blend well.

Step 4

Add 213 g (1½ cup) flour, 1 tsp baking soda and ½ tsp salt; stir just until dry ingredients are moistened. Spread the batter evenly in the prepared pan.

Step 5

Bake for 60 minutes until toothpick inserted in the center of the loaf comes out clean.

Step 6

Cool for 5 minutes in the pan. Gently turn out onto a cooling rack and cool completely. Store covered at room temperature
