Ingredients

Yield: 1 serving

2 chicken breasts, deboned and skinned
¼ tsp cumin
1 clove garlic, pressed
120 g greek-style soy yoghurt
a bit ground black pepper
¼ lemon
2 tbsp olive oil
½ onion, large
½ tbsp oregano
½ tsp salt

Preparation

Step 1

Add 1 clove garlic, ½ tsp salt, a bit ground black pepper, ½ tbsp oregano, ¼ tsp cumin, 2 tbsp olive oil, 120 g greek-style soy yoghurt, and the juice from ¼ lemon into a bowl and whip it all together.

Step 2

Add 2 chicken breasts, mix well, and put in the refrigerator for at least 60 minutes (or up to 1440 minutes) so that the chicken absorbs all the flavors.

Step 3

Pull out the chicken from the fridge and pre-heat the oven at 200C

Step 4

Use ½ onion as a base, and insert a stick vertically to use as a skewer.

Step 5

Place the base on an oven tray covered with baking paper.

Stick the chicken breasts cut into smaller pieces into the skewer. Rotate the pieces so that the pile is compact.

Step 7

Put in the oven for 60-90 minutes, until the chicken is golden and crusty on the sides.

Step 8

Cool down for 10-15 minutes before cutting the chicken.

Serve with pita bread, tzatziki, feta cheese, and vegetables (e.g., aubergines, zucchinis, salad, tomatoes).
